Everywhere you turn, people are discussing gluten and gluten intolerance. The evidence that has been coming out discusses the harmful effects of gluten and our body’s inability to digest properly. Wheat has been genetically altered and this has made it difficult for over 15% of all people to digest gluten. It is expected another 10% of the population may have an allergy, but are unaware of it.
Wheat was genetically altered to help solve the world hunger problem. The tall strands of wheat we remember in the 70’s have become short-dwarf like stalks. The increase production of wheat was beneficial for the hunger issue, however it has also caused other health issues.
I instruct my patients to read a book called “Wheat Belly.” The book explains gluten intolerance and answers many of the questions that the average person has.
